What constitutes “proof” of a theory?

There is a simple experiment I can do at home to prove that gravity is a fact. I can drop a pencil, and it will fall to the floor. No matter how many times I do this, the pencil falls, every time. I have “proven” the theory of gravity (and I thought it was the “Law of Gravity”).
Is there a similar experiment I can do at home to prove evolution? For instance, does anyone know the procedure for evolving my grandson’s brine shrimp into the cute little “sea monkeys” pictured on the label of the kit he bought? Seriously, he is quite disappointed…
I’d really like to see something a bit more convincing than some bacteria adapting to vaccines, or fruit flies that have been genetically altered in a laboratory. The finches were cool, but they’re still finches, and they can still mate with their normal-beaked family.
If someone could show me how to get those shrimp to evolve, not only would they impress me enough to make a believe out of me, they would also be making a little boy happy…

Brine shrimp?

My brine shrimp hatched, like 99 percent of them…. omg I have so many of them….I put 3 drops in the water, and there is like, 4 billion of them. Should I worry about the fact there are so many? I wont be feeding the fish untill they are gone… omg what have I done?

freshwater eels?

I was just given a fish tank today with some goldfish and some eels. The eels are about 7 inches long and are about 3/4 inch tall. They are brown and their tail fins are broad. I know for a fact that they aren’t tire tracks or spiny eels. They also have whiskers (six that go around their mouth) and they sometimes suck on the side of the tank. They are moderately aggressive when fed brine shrimp, but for the most part are mild mannered and stick together.

Any ideas of what they may be?

Why are brine shrimp attracted to light?

..I am doing an experiment, and I have trouble finding why, other than the fact that they are “phototropic”..or is that it?
